ZOODLES WITH MARINATED TOFU SAUCE, PEPPER, AND TOMATOES

Serves 2


For zoodles

Ingredients:

  • 3 medium zucchini

  • green part of spring onion

  • tamari

  • pepper



Cut zucchini with a spiral cutter, put them in a bowl and season with the chopped green part of the spring onion, tamari, and pepper. Leave everything at room temperature for zoodles to marinate and release the juices.


For the sauce

Ingredients:

  • 200 g marinated tofu

  • 1 red pepper

  • 1 green pepper

  • 2 cups cherry tomatoes

  • 1/2 cup tomato paste

  • salt and pepper

  • small bunch of basil (for serving)

Break marinated tofu with your hands and chop the herbs that marinated with tofu. Add diced peppers, tomatoes, and tomato paste. Season and mix all the ingredients well.

Drain the zoodles and neatly place them on a plate. Serve them with tomato sauce and fresh basil.
