For 1,5 liters
Ingredients:
1,5 liters of water
100 g organic cane sugar
5 tbs of water kefir grains
dried fruit
orange zest
cinnamon
It is important that all containers and utensils are pre-sterilized when we make the kefir.
Place kefir grains and cane sugar in a larger glass bowl. Pour the water over the grains and stir well with a ceramic or plastic spoon (grains mustn't come into contact with metal as they can be damaged and kefir will fall). If desired, you may add dried fruit.
Keep the bowl uncovered and protect it only with a thin clean cotton cloth. Leave it at room temperature (in the cold months, you can also leave it on the counter next to the radiator) for 2 - 3 days to initiate the fermentation process. Slightly stir once or twice a day.
Pour it through a non-metal strainer and the fermented beverage is ready.
If you want to upgrade it, you can proceed with secondary fermentation. Pour the kefir into glass bottles, add orange zest and cinnamon into each bottle if you like, and hermetically seal them. Let them rest at room temperature again for a day or two. Then store them in a fridge.
You will notice that kefir grains have multiplied during the primary fermentation - you can use them and make a new beverage or store them in a clean container with enough liquid to cover them in a fridge and occasionally feed them with cane sugar.
