Ingredients:
2 leeks
200 g tofu with turmeric
2 zucchini
1 kohlrabi
1/2 white cabbage
few handfuls of baby spinach
few pinches of caraway
tamari
water as needed
Water fry chopped leek, add tofu cut into sticks, and fry until it browns. Add zucchini sticks, kohlrabi, cabbage sliced with a mandoline slicer, and quickly fry everything. Season and add water if needed. Just before serving, add spinach and quickly fry a bit more until the spinach wilts but still remains freshly green. We served the stir-fry with carrot puree.
