For the sauce
Ingredients:
840 g canned plum tomatoes
1 large spoon of sun-dried tomatoes
1 tsp capers
1 large onion
2 cloves of garlic
salt
pepper
basil
oregano
Fry the chopped onion with some olive oil. When it turns yellow, add finely chopped sun-dried tomatoes and capers. Stir and fry for 5 minutes until the onion and tomatoes soak. Then add the finely chopped garlic and fry until a lovely fragrance develops.
Add diced plum tomatoes. Season the sauce to taste - add salt, pepper, basil, and oregano. Simmer on low heat for 15-20 minutes or until the sauce thickens.
Pasta
Ingredients:
500 g brown rice pasta (or any other pasta)
3 tbs salt
water
nutritional yeast*
Add water to a big pot and boil it. When the water starts to boil, add salt and pasta. Cook according to the manufacturer's instructions. Drain the pasta, add the sauce, and mix.
*Before serving, you may sprinkle some nutritional yeast on the pasta.
