Ingredients:
2 leeks
2 tsp ground coriander
1 tbs tomato paste
3 bay leaves
1 tsp cacao
3 cups cooked red beans
700 ml tomato puree
1 cup cooked or fresh corn
small bunch of fresh cilantro
bean stock or water
salt and pepper
Chop and water fry the leeks, add all the spices and cacao, and fry until you get a nice fragrance. Add beans, stir, then add tomato paste. Add bean stock or water if needed, season with salt and pepper and cook until the sauce develops a flavor. Add fresh corn a few minutes before you finish cooking. When you serve, add chopped coriander on top. This is a great side dish for fennel salad, blanched chard and pepper.
