Ingredients:
3 tbs olive oil
1 red onion
3 medium sized zucchinis
350 g brussel sprouts
250 g pasta (your choice - adjust cooking time)
pinch of black pepper
pinch of salt
parsley
3 cloves of garlic
100 g shiitake mushrooms
100 ml soy cream
2 spoonfuls of nutritional yeast
Fry or water-fry the onion and add strips of zucchini, quarters of brussel sprouts and salt. While frying, add garlic, parsley, and black pepper. After 20 minutes lower the heat and mix in the soy cream and nutritional yeast, and stir for 5 minutes.
Cook the pasta (adjust the time) and in the meantime fry shiitake seasoned with salt.
CUCUMBER AND TOMATO SALAD
Serves 4
Ingredients:
1 big cucumber
2 big tomatoes
1 spring onion with greens
pinch of salt
2 sprigs of parsley
1 tbs pumpkin seed oil
1-2 tbs apple cider vinegar
Cut tomatoes, cucumber and spring onion. Season with oil, vinegar and salt. You may add green herbs and spices such as basil, parsley, thyme, etc.
