Ingredients:
500 g okra
1 leek
2 tbs apple cider vinegar
1 cup sun-dried tomatoes
small bunch of fresh thyme
8 dried apricots
salt and pepper

Cut off the okra stems just below the end so it stays intact. Soak it in icy water for a few minutes and wash it well. Repeat the procedure two more times. This way you get rid of slime that would otherwise release while cooking.
Chop the leek, water fry it and add okra. Season with salt and pepper and deglaze with apple cider vinegar. Add chopped tomatoes, thyme, and finely cut apricots. Add a little bit of water, approx. 100 ml, and cook on medium heat for about half an hour without stirring. Taste and see if the dish needs more seasoning, then serve. Okra, prepared this way, is great warm or cold.
