Ingredients:
1/2 cup black lentils
2 handfuls cherry tomatoes
1/2 small red cabbage
small bunch of celery leaves
100 g pine nuts
tbs or two balsamic vinegar
salt and pepper
Cook the lentils and allow to cool. Preheat the oven to 180°C°. Roast the cherry tomatoes for about 30 minutes and let them cool. Meanwhile, shred the cabbage using a mandolin slicer and chop celery leaves. Briefly roast the pine nuts. Put all the ingredients in a bigger bowl, season to taste, stir well and serve.
