KING OYSTER MUSHROOMS WITH BAKED TOMATOES

Serves 2


Ingredients:

  • 1 leek

  • 200 g king oyster mushrooms

  • few bay leaves

  • pinch or two of savory

  • 6 tomatoes

  • small bunch of fresh parsley

  • salt and pepper

  • water as needed



Preheat the oven to 170°C. Cut tomatoes into quarters, place them on a baking tray, salt lightly and bake until they are golden brown, approx. an hour. Chop the leek and water fry it, cut the mushrooms and add them to the leek and season. Fry until everything is golden brown. Add some water and just before it completely evaporates, add baked tomatoes cut into quarters, but just briefly, until they warm up, season to taste and serve. We served them as a side dish to the black-eyed peas sauce and sprinkled with chopped parsley.
