Ingredients:
● bunch of kale
● white part of spring onion
● bunch of asparagus
● bunch of young beet stalks
● salt and pepper
● balsamic vinegar
Pull the kale leaves from their stems and tear them into small pieces. Then massage the leaves until they soften. Add the chopped white part of spring onion, thinly cut asparagus, and beet greens to the kale. Season with salt and pepper and balsamic. Mix well and serve.
You can add pan-fried tofu, baba ganoush, guacamole, and your favorite dressing to the salad to make it richer.
