GLUTEN-FREE BANANA BREAD

For one baking tray


Flax egg:

  • 2 tbs ground golden flax seeds

  • 8 tbs water


Mix the ingredients and let the mixture rise. In the meantime, prepare dry and wet ingredients.


Dry ingredients:

  • 150 g rice flour

  • 90 g carob powder

  • 1 tsp baking powder with wine stone

  • 2 tbs ground golden flax seeds

  • 1/2 tsp salt

  • 3 tbs coconut sugar

  • 1 tsp gingerbread spice mix



Put all the ingredients into a big bowl and mix. Make sure you crush bigger pieces of baking powder with wine stone.


Wet ingredients:

  • 3 tbs peanut butter

  • 250 ml soy milk

  • 1/2 tsp vanilla

  • 2 big ripe bananas

  • 100 g chocolate chips

  • 1 banana to decorate


Add all the ingredients, except chocolate chips, into a food processor and blend. Add the dry ingredients to the mixture, then add the flax egg and chocolate chips, and stir well. Pour the mixture on the baking tray and decorate the top with a banana. Preheat the oven to 180°C and bake for 45 minutes. Serve it while it is still warm. Try it with hot cocoa with a pinch of cardamom.
