GARAM MASALA

Preparation time: a few minutes Difficulty: easy Garam masala is a popular Indian spice blend that doesn't have a universal recipe because every part of India makes it in its own way. You can find it in most stores, or you can make your own at home. Ingredients:

  • 3 tbs coriander

  • 2 tsp caraway

  • 2 tsp black pepper

  • 1/2 tsp cloves

  • 1/2 tsp cardamom

  • 1/2 tsp nutmeg

  • 1 tsp cinnamon

  • 1 bay leaf

  • a pinch of cayenne pepper or chili (optional)


If all the ingredients are already ground, you only need to mix them and store them in a jar. And if you are using whole seeds, first, grind them in a coffee grinder, with mortar and pestle, or in a blender to make powder and store them in a jar. Make sure you remove the stem of a bay leaf before grinding. There is no universal version of the spice, so you can always skip an ingredient or replace it with a different spice such as fennel, anise or cumin. If you love your food extra spicy, add more chili or cayenne pepper to the spice blend.
