FRUIT COCONUT YOGURT WITH GRANOLA

Difficulty: easy

Serves 2

Fruit yogurt

Ingredients:

  • 500 ml coconut yogurt

  • 100-150 g strawberries and/or other berries (fresh or frozen)

  • 1 tsp lemon juice

  • *optional: healthy sweetener (stevia, coconut sugar...)


Quickly cook the fruit in a saucepan, then mix it in a blender to get a fruit puree and let it cool. If you want the yogurt to stay raw, blend the fresh fruit without heating it first.

Add a healthy sweetener if you wish.

Add coconut yogurt and lemon juice then quickly mix again at the lowest setting of the blender. Blend until you get a thick mixture (do not over-mix to avoid damaging the yogurt structure).

Topping

Ingredients:

  • crushed raw cacao beans

  • mixed granola

  • wild strawberries

  • fresh thyme and mint leaves

Serve the fruit yogurt in a bowl, garnish with a suggested topping or other nuts and seeds that you like.
