FRESH LENTIL LEAVES SALAD WITH YOUNG PEAS AND KOHLRABI

Serves 2


Ingredients:

  • big bunch of fresh lentil leaves*

  • 2 small kohlrabis

  • 1 cup young peas

  • 2 tbs pumpkin seeds

  • salt



Thinly slice lentil leaves and kohlrabi and blanch the young peas. Fry pumpkin seeds until they are golden brown. Add all ingredients to a bigger bowl, season, toss well, and serve. You may adapt the quantities of ingredients to your own taste. However you like the most.

*You may replace lentil leaves with pea leaves
