Makes around 12 cookies
Wet ingredients:
300 g silky tofu
1 cup coconut oil
1/4 cup coconut milk
1 cup coconut sugar
1/2 tsp vanilla
few drops of orange essence
Put the wet ingredients into a blender and quickly blend until all the ingredients come together. Pour into a bigger bowl.
Dry ingredients:
1 cup soy flour (you can also use rice flour)
2 cups coconut flakes
1/2 tsp salt
2 tsp baking powder
Mix all dry ingredients and add them to the wet mixture. Mix them well and place the batter in a fridge until it hardens.
Make half balls with an ice cream scoop, place them on top of the baking tray and gently flatten them. Preheat the oven to 180°C. Place the baking tray into the oven and bake for approx. 15 minutes or until the edges are golden brown.
Ingredients for icing:
250 g dark chocolate
1 tbs coconut oil
Steam melt the chocolate and coconut oil and spread over cooled down cookies. You may also dip the cookies into the icing and decorate the top with dehydrated fruit.
