CHIA PUDDING

Serves 5


Ingredients:

  • 5 oz/150 g raw almonds

  • approx. 1 cup coconut cream

  • 1 ½ cup coconut milk

  • sweetener to taste

  • ½ tsp bourbon vanilla

  • 3 oz/70 g chia seeds*



Soak raw almonds for at least four hours. Drain them and add them to a blender with the rest of the ingredients except chia seeds. Blend until the mixture is almost smooth and then pour it into a bigger bowl. While whisking, add chia seeds. Then stir the pudding every 15 minutes for one hour. All matcha lovers can add a teaspoon or two of quality matcha powder while blending. Make it as strong as you like.


Garnish with:

  • mixed berries or any seasonal fruit

  • hemp seeds


Divide the pudding between glasses and garnish with mixed berries or any other seasonal fruit and sprinkle hemp seeds on top.


*The weight of chia seeds depends on the sort of the seeds. If the pudding is too thin after half an hour, add more chia seeds.
