Serves 2
Ingredients:
1 cauliflower
half of red, green and yellow pepper
2 carrots
1 cup red beans
1 tsp tamari (or salt)
1 tsp grated ginger
lemon juice (one lemon)
spices of your choice (parsley, basil, chives, etc.)
Optional - sauce
1 tbs tahini
1 tbs mustard
pinch of salt
Chop the cauliflower in a food processor and fry it on a tablespoon of oil for 5 minutes. Remove from the heat. Fry the strips of carrots and peppers for 5 minutes, add tamari (or salt), spices and red beans. Fry for another 10 minutes and in the end stir in a teaspoon of grated ginger. Mix the vegetables with cauliflower in a big bowl and add the lemon juice.
Mix all the ingredients for the sauce, add two spoonfuls of water and stir with a fork until the sauce thickens.
SIDE DISH:
FRESH TOMATO SALAD
Serves 2
Ingredients:
1 red onion
4 tomatoes
3 garlic cloves
1 tbs pumpkin seed oil
1-2 tbs apple cider vinegar
seeds of your choice (hemp, pumpkin, sesame, etc.)
Thinly slice the onion and tomatoes, and crush the garlic. Add to a bowl, season and toss.
SWEET POTATO IN A PAN
Serves 2
Ingredients:
1 tbs olive oil
1 big sweet potato
1 tsp tamari (or salt)
Heat the oil and add sweet potato cut into strips. Season and fry for 10 minutes, then cover with lid and fry for another 10 minutes.
