Ingredients:
150 g self-raising gluten-free flour
150 g millet flour
150 g carob flour
150 g coconut sugar
1 sachet of wine stone (21 g)
1 tsp vanilla
1 tsp cinnamon
100 ml coconut milk
200 ml oat milk
2 tbs apple cider vinegar
3 apples
Icing:
200 g dark chocolate
2 tbs coconut syrup
2 tbs coconut oil
Preheat the oven to 170°C. Add the vinegar to the oat milk. Peel and grate the apples. Mix all of the dry ingredients in a bowl.
Put the wet ingredients into a large bowl, add the dry ingredients and apples and mix with a hand mixer (for dough). Pour the mixture into a pre-oiled tray (19x27 cm) and bake in an oven for 35 minutes.
Break the chocolate into smaller pieces and add them to a small bowl, add the sweetener and oil. Melt the chocolate over a water bath and mix well. Let it cool down a bit to make the icing thicker.
Cut the cake into slices, place them on a cooling rack and pour the chocolate over them. You can also pour the chocolate over the unsliced cake and cut it when the cake cools down.
