BROWN LENTILS WITH WHITE CABBAGE AND CARROTS

Difficulty: easy


Serves 3


Ingredients:

  • 1 ¾ cup brown lentils

  • 1 leek

  • half of fresh white cabbage

  • 1 tbs tomato paste

  • few bay leaves

  • few sprigs of fresh thyme

  • 1 or 2 tsp smoked paprika

  • 2 medium carrots

  • small bunch of cilantro

  • salt and pepper

  • water


Cook brown lentils al dente. Cut the leek and water fry it. Neatly slice the cabbage and add it to the leek with a spoon of tomato paste, and add the seasoning. When it gets a nice fragrance and the cabbage is fried, add brown lentils and water or vegetable stock. Neatly dice the carrots and add them to the lentils. Gradually add water or stock until the lentils are done. Season to taste, chop the parsley and sprinkle it on top, and serve. In the end, you may add a spoon or two of molasses yeast flakes.
