Ingredients:
2 leeks - chopped
2 medium carrots - thinly sliced
few bay leaves
2 sprigs of fresh rosemary
100 ml quality red wine
2 cups cooked black-eyed peas
1 jar diced tomatoes
water as needed
salt and pepper
Water fry leeks and carrots together with the spices and deglaze everything with wine. Add peas and tomatoes and water if needed. Bring to a boil and cook until the flavors combine, approx. half an hour. Season to taste and serve.
We made king oyster mushrooms with baked tomatoes as a side dish.
