BLACK-EYED PEAS IN A SAUCE

Preparation time: 20-40 min

Serves 2


Ingredients:

  • 2 leeks - chopped

  • 2 medium carrots - thinly sliced

  • few bay leaves

  • 2 sprigs of fresh rosemary

  • 100 ml quality red wine

  • 2 cups cooked black-eyed peas

  • 1 jar diced tomatoes

  • water as needed

  • salt and pepper



Water fry leeks and carrots together with the spices and deglaze everything with wine. Add peas and tomatoes and water if needed. Bring to a boil and cook until the flavors combine, approx. half an hour. Season to taste and serve.
