BBQ PULLED JACKFRUIT

Serves 3


Ingredients:

  • 2 cans of jackfruit in brine

  • 2 shallots

  • 300 g of corn*

  • 600 g bbq sauce

  • 100-200 ml water



Drain and rinse the jackfruit and gently loosen it with your hands. Thinly cut the shallots. Preheat the oven to 180°C. Mix all the ingredients in a bigger bowl and if the batter is not juicy enough, add more barbecue sauce, as it loses juiciness in the oven. Add to the baking tray and bake until golden brown. It pairs well with tortilla and guacamole or with fresh tomato salad with cilantro.


*If you can, use fresh corn
