BARLEY SOUP

Difficulty: easy


Serves 4


Ingredients:

  • 200 g pot barley

  • 4 shallots

  • 3 bay leaves 

  • 3 tbs tomato sauce

  • 1 tbs ground paprika

  • 2 carrots

  • 200 g smoked tofu

  • 1 can cooked red beans

  • 1 tbs dried lovage

  • 1 l water (or more)

  • salt and pepper

  • small bunch of chives



Soak barley overnight and cook the next day. Finely slice the shallots, and dice carrots and tofu.


Water-fry the shallots in a bigger saucepan, add bay leaves, tomato sauce and ground paprika and allow this mixture to develop a pleasant fragrance. Add carrots, tofu, beans, and barley to the mixture. Let it simmer on low heat for about an hour. If necessary, add some water. Half an hour before serving, season with lovage and add salt and pepper to taste. Serve garnished with chopped chives.
