Ingredients:
3 medium sized zucchinis
1 spring onion
few leaves of fresh basil
few sprigs of fresh marjoram
few leaves of fresh lovage
1 tbs golden flax seeds
salt
1 pack silky tofu
5 tbs nutritional yeast
pumpkin seeds
Make zucchini spaghetti with a spiral cutter. If you don't have the cutter, just grate the zucchinis. Pluck the herbs and chop them.
Add zucchini spaghetti, chopped spring onion, herbs, and coarsely ground flax seeds to a bigger bowl. Mix well. Add silky tofu, nutritional yeast and salt to a food processor, and blend. Pour the mixture over spaghetti and mix again. The batter needs to be the consistency of a pudding. Hand shape the balls and put them onto the baking tray, cover the balls with ground pumpkin seeds (the size of breadcrumbs). Preheat the oven to 180°C and bake until golden brown.
