BAKED EGGPLANTS WITH BABA GANOUSH, QUINOA, AND CUCUMBER SALAD

Serves 2


Ingredients:

  • baked eggplants

  • baba ganoush

  • quinoa with tomatoes

  • cucumbers with yogurt



For baked eggplants

Ingredients:

  • 3 medium eggplants

  • salt and pepper


Halve the eggplants and make a cross-cut on the inside. Place them upright on the baking tray, add salt and pepper, and bake them at 200°C until they are golden brown, approx. 40 minutes.


For quinoa with tomatoes

Ingredients:

  • 1 ½ cup red quinoa

  • 2 cups cherry tomatoes

  • small bunch of cilantro

  • the green part of spring onion

  • salt and pepper


Cook quinoa al dente in salted water and let it cool. Add neatly cut cherry tomatoes, chopped cilantro, and the green part of the spring onion. Mix well and season to taste.


For cucumber with yogurt

Ingredients:

  • 4 small cucumbers

  • small bunch of dill

  • 1 tbs lemon juice

  • 200 g plain soy yogurt

  • salt and pepper


Nicely cut the cucumbers, add chopped dill, lemon juice, yogurt, salt, and pepper. Mix well and if necessary, add more yogurt or salt and pepper.


Neatly plate everything and serve.
