BAKED BEETROOT WITH NETTLE, TOMATOES, AND RADISH

Serves 2


Ingredients:

  • 4 medium beets

  • 2 cups cherry tomatoes

  • 4 radishes

  • bunch of nettle leaves

  • small bunch of fennel

  • balsamic vinegar

  • salt and pepper


Preheat the oven to 150°C. Dice the beets and bake them for approx. 40 minutes. Keep them crunchy in the middle. In the meantime, prepare the rest of the ingredients. Cut tomatoes, take the mandoline slicer and thinly slice the radishes. Blanch nettle leaves and chop them together with fennel. Add all ingredients to a bigger bowl, season to taste, mix well, and serve.
