Ingredients:
1 small leek
10 baby potatoes cut to 0,5 cm
3 zucchini cut to 0,5 cm
dry marjoram
salt
Chop and water fry the leek. Cut potatoes and zucchini into half centimeter thick circles. Mix all the ingredients in a bigger bowl, season and spread nicely on the baking tray. Preheat the oven to 180°C. Place potatoes in the oven. Bake until potatoes are done and zucchini get a golden brown color. In the meantime prepare parmesan cheese.
Ingredients for parmesan cheese:
3/4 cups nutritional yeast
few cashew nuts
pinch of salt
Add cashews to a food processor. Coarsely grind them together with nutritional yeast. Sprinkle a few spoons over potatoes and zucchini and bake for a few more minutes, until parmesan is also nicely 'baked'. Save the rest of the parmesan. The dish goes great with salads or pasta.
