BABY ARTICHOKE, BABY SPINACH, FENNEL, AND CELERY SALAD

Serves 2


Ingredients:

  • 5 fresh artichokes

  • 2 big handfuls of baby spinach

  • 2 fennel bulbs

  • bunch of celery leaves

  • few tbs roasted pumpkin seeds

  • salt and pepper


Clean, cook and cut the artichokes. Roll the spinach and cut it into thin leaves, thinly slice the fennel with a mandoline slicer, and chop celery leaves. Add everything to a bigger bowl, toss gently, and before serving, sprinkle with roasted pumpkin seeds. Use your favorite dressing.
