Ingredients:
5 fresh artichokes
2 big handfuls of baby spinach
2 fennel bulbs
bunch of celery leaves
few tbs roasted pumpkin seeds
salt and pepper
Clean, cook and cut the artichokes. Roll the spinach and cut it into thin leaves, thinly slice the fennel with a mandoline slicer, and chop celery leaves. Add everything to a bigger bowl, toss gently, and before serving, sprinkle with roasted pumpkin seeds. Use your favorite dressing.
