Ingredients:
150 g carrots
1 tbs sesame seeds
1 tbs soy sauce
bunch of asparagus
200 g silky tofu
1 tbs turmeric
1 tbs soy sauce
Clean and thinly slice the carrots into long strips. Quickly water fry them. When they are slightly fried add approx. 200 ml of water and bring to a simmer on low heat and cook until carrots soften. Finally, add a tablespoon of soy sauce, sesame, and fry quickly.
Clean and break asparagus into smaller pieces. Quickly water fry them (5 minutes - add water if needed so they don’t burn), add a cube of silky tofu, and break it into smaller pieces with a wooden spoon. While stirring, add turmeric and soy sauce and quickly fry.
Carrot nituke originates from macrobiotics and is very effective in yanganizing the body, meaning it tries to balance it. It is also delicious if we make it with dandelion roots, which we usually cannot buy and we need to pick them ourselves.
